3 Healthy Dinner Recipes

Okay, gf so I know it's that time of the year where all those extra treats and cocktails creep in and then you enter the new year feeling like crap. I’ve been there.

We get overwhelmed with stress and end up indulging a little too much. This holiday season I’m stepping out of my comfort zone and truly letting myself enjoy those extra treats without feeling guilty by enjoying these 3 healthy meals that are full of flavor. Are you with me?

As mentioned in my first blog post building a healthy lifestyle is all about balance and enjoying the ride. The holidays only come around once a year so let's enjoy ourselves and save our waistlines. 

In this blog, I’ll be sharing 3 delicious dinner recipes that are simple and full of flavor. 

  1. Teriyaki Air Fryer Salmon Bowl

  2. Ground Turkey and Zucchini Spirals

  1. Teriyaki Air Fryer Salmon Bowls

Salmon has been my go to meal these past few months. Salmon is full of omega-3’s, a great source of protein and I love how I can add different seasonings and sauces to switch up the flavor.

You Will Need:

My recipe is simple.

  1. Preheat your air fryer at 375 degrees for 5 minutes. *If you don’t have an air fryer you can bake in the oven or pan sear.

  2. Take 4-5 oz. of salmon and add your favorite seasonings like salt, pepper, garlic, cayenne, and Mrs. Dash Salt Free Seasoning and 2 tbsp. of teriyaki sauce. 

  3. Air fry salmon for 10-12 minutes.

  4. Take salmon out of the air fryer and create your bowl.

Layer your bowl from bottom to top  following these 5 steps to make sure you’re nourishing my body. 

Layer 1: Greens! Anything like spinach, spring mix, romaine or kale is great

Layer 2: Veggies! Add your favorite veggies like asparagus, sweet peppers, sweet potatoes, zucchini, broccoli, grape tomatoes and butternut squash

Layer 3: Grains! Add brown rice or quinoa to make it a hearty bowl. Skipping grains? Sub the rice for cauliflower rice. 

Layer 4: Protein! Add your air fried salmon

Layer 5: Healthy fats: Add ¼ of an avocado, hummus or drizzle olive oil on top

Enjoy your delicious teriyaki salmon bowl!

2. Ground Turkey and Zucchini Spirals

I absolutely love this meal because it's so easy, delicious and a crowd pleaser!

You Will Need:

  1. 1 lb. 93% lean ground turkey

  2. 4 fresh zucchini

  3. Desired seasonings

    1. Salt, pepper, salt, pepper, garlic, cayenne, Mrs. Dash salt free seasoning, oregano, parsley

  4. ½ cup Rao’s Marinara Sauce

  5. 1 tbsp. of Avocado Oil

  1. Preheat the pan and spray with 1 tbsp. of avocado oil. Add your ground turkey and cook on medium heat for about 10 minutes.

  2. Add your desired seasonings and Rao's Marinara Sauce. Cover and let cook for 10 minutes. 

  3. Spiralize fresh zucchini and steam on low heat and cover. Cook until desired tenderness and drain with a strainer. Fresh zucchini is best because it makes me feel like I’m eating an actual pasta noodle. 

  4. Layer zucchini spirals at the bottom of the bowl and add ground turkey sauce on top. Sprinkle it with nutritional yeast or parmesan cheese and enjoy!

  5. Quick tip: If you feel like you want more of a noodle, sub the zucchini spirals for gluten free pasta!

3. Chicken Sausage & Veggies

This is one of my favorite meals because I can throw everything in the air fryer and  it can be done in under 30 minutes! 

You will need:

  1. 1 lbs your favorite variety of chicken sausage

  2. 1 sweet potato, sliced

  3. 1 zucchini, sliced

  4. 1 bunch of asparagus 

    1. Preheat your air fryer at 375 degrees for 5 minutes.

    2. Cut sweet potatoes, add desired seasonings and cook for 15 minutes.

    3. Cut chicken sausage, zucchini and asparagus and set aside.

    4. After the sweet potatoes are finished, remove them from the air fryer.

    5. Add chicken sausage, zucchini and asparagus to the air fryer and cook for 10-15 minutes, shaking occasionally.

    6. Remove all ingredients from the air fryer and build your bowl!
