SUPER Easy Warm and Cozy Salsa Chicken Bowls

Let’s make this super easy, warm and cozy Salsa Chicken Bowl!

I don’t know about you but Salsa Chicken is one of the easiest dinners of all time. It’s packed with flavor, it’s nutritious and you can make enough so that you can have leftovers.

The best part is you can throw all the ingredients in the Instapot for an easy one pot meal!

This post is all about a warm and cozy Salsa Chicken Bowl!

This recipe serves 3-4 people. Double your ingredients for more people or leftovers.

Total Prep Time: 15 minutes

Total Cook Time: 30-45 minutes

The Ingredients:

The Recipe:

  • In your Instapot, use the Saute setting to preheat your pot. Once pot is hot add your chopped red peppers and yellow onion.

  • Once those become carmelized, add your chicken breast. I just chicken thighs and it ended up not being enough meat, just get the breast.

  • Add both packs of taco seasoning and low sodium chicken broth

  • Stir all ingredients together.

  • Close lid, turn to the Pressure Cook setting for 15 minutes and press Start.

  • It will take 10-15 minutes for pressure to build up before pressure cooking begins.

  • When the Instant Pot makes the beeping noise, it will start releasing the pressure. The pot will not let you move the lid until pressure is fully released. You can manually release pressure also known as quick release.

  • Once the Salsa Chicken has finished cooking, stir to ensure everything is cooked to liking

  • Add frozen corn and replace lid for 5 minutes.

  • By now the flavor should be flavoring and it’s time to plate.

  • Layer your brown rice at the bottom, side of zucchini and squash and top with your Salsa Chicken

  • Enjoy!

The amazing thing about this recipe is that the Instant Pot does everything! You can put all of your ingredients into the pot and viola you have a warm and cozy dinner.
