Purchase a fresh Salmon fillet (or frozen) at your local grocery store. Sauté veggies of choice with your favorite seasoning. You can easily get a bag of frozen veggies. Add your favorite carb like brown rice, sweet potatoes and voila!

I air fried my salmon in a teriyaki sauce (350 degrees for 10-12 minutes). I purchased a fresh Salmon fillet for $5 at my local grocery store. Then, I sautéd asparagus and a red bell pepper in garlic salt. I already had brown rice prepped. Lastly, I layered my bowl with brown rice on the bottom, veggies and salmon topped with sesame seeds.

The total cost for 1 bowl is about $10. Simply, healthy and affordable!

2. Chicken Fajita Salad

This is a super quick and healthy lunch option when you’re busy and need to throw something together. This chicken fajita salad took 30 minutes from prep to finish.

Season your chicken with the Trader Joes taco seasoning and added their roasted bell peppers. Mix everything together and air fryer on 350 degrees for about 13-15 minutes.

Layer your bowl with spring mix, cucumbers, grape tomatoes and chicken fajitas! Top with a homemade avocado crema dressing. I didn’t have lime so I used lemon and it still tasted amazing!

The total cost for this salad was about $10!

3. Shrimp Casear Salad

This shrimp Caesar Salad is perfect for pescatarians, plant based eaters and low calorie and low carb meal lovers. Best part is that it takes about 10 minutes to cook!

I purchased peeled and deveined shrimp and seasoned with a little bit of everything. I air fried for about 7 minutes on 350 degrees making sure to shake the basket halfway through.

I took spring mix, sweet peppers and grape tomatoes and mixed it with this Field and Farmers Plant Based Caesar Dressing. Top with your shrimp and enjoy!

4. Chicken Caesar Salad in a Jar

I know you love a good chicken Caesar salad! Lucky for you, you can make this in less than 5 minutes!

Take your favorite mason jar and layer with the Field and Farmers Plant Based Caesar Dressing, romaine, spinach, grilled chicken and cucumbers. Give your jar a good shake and enjoy!

The total costs for both of these jars is ~$15.

5. Ground Turkey Taco Salad

You can’t go wrong with a ground turkey taco salad. This should take about 20 minutes to make!

Season and cook your ground turkey with your favorite seasoning. While your ground turkey is cooking, prep your salad with your favorite greens (spinach, spring mix and romaine). Add your ground turkey and top with your favorite veggies like grape tomatoes, bell peppers and microgreens.

Season your ground turkey with taco seasoning and cook. In a separate skillet, sauté your sweet potatoes until they soften. You can save time and purchase precut sweet potatoes. When both are finished cooking, combine the ground turkey and sweet potatoes and cook on low heat.

7. Ground Turkey Spaghetti

This is a protein packed, cheap and healthy lunch idea!

Boil your water for to cook your pasta. I used the Barilla Protein + Spaghetti Pasta for an additional 10 grams of protein. Season and cook your ground turkey (I used 99% lean for 30 grams of protein per 4oz).

While both of these are cooking steam broccoli for you to enjoy on the side:)

After your ground turkey is finished cooking add your favorite marinara sauce, simmer and cover for 10 minutes.

Plate with noodles on the bottom, meat sauce on top and steamed broccoli on the side. You should have leftover food for at least 1 or 2 more meals!
